Can I install a 90 degree elbow straight out of the stove? It would allow me to use the existing horizontal exhaust spindle, instead of cutting another hole in the workshop.

The install manual will tell you what the APPROVED venting specifications are.

I downloaded the manual and it is silent on this specific point. It does allow for horizontal exhaust pipes. It just doesn't say whether there should/must be a vertical run before turning horizontal.

IF it's NOT SPECIFICALLY stated that it is unacceptable to start with a 90 degree elbow DIRECTLY off the appliance,
then I would give it a shot. You will be restricting the exhaust flow by 30 - 50%, but with a short run you should be ok.
