I'm looking for an insert that has around a 3 cubic feet firebox but also has a nice sized viewing area. Something that will give me long burn times preferably close to 10 hours.

Should I be looking at catalytic stoves for longer burn rates?

Most good 3.0 cu ft inserts will provide long burn times. Examples: Osburn 2400, Regency ci2600, PE Summit, Quad 5100i. In catalytic there are the Blaze King Princess insert, Buck 91, Appalachian 52 bay

I'd argue that a prospective stove buyer should always be looking for catalytic.

I like my 5100i. Good burn times and it looks nice.

Installed professionally two weeks ago
House is approx 3800sq feet, open floor plan, while
House is at least 70 with main room being around 86 degrees! This thing is hot!

Any suggestions how to even out the temperature in each of the rooms? Do you worry about pipe freezes? Will a cast iron steamer make steam if placed on top of insert? How long does it typically take for ambers to die down for cleanout? How many days between clean outs?

Small fan on the floor down the hallway, blowing the cooler, dense air back along the floor, toward the stove room. Cool air exiting the cooler area will be replaced by warm air and will augment the natural convection loop out of the stove room.

I forgot to mention, low speed on the small fan should be plenty; You only need to boost natural convection a bit to have a noticeable effect.
 
Long burn time is an ambiguous question to ask without also indicating what rate of heat output (BTUs) is needed during the burn time. The better question is "will the heat shown by the output curve over the burn time meet my needs?" That may be a difficult question to answer as you will need to know your BTU/hr heat loss and detail specifications for your stove output over time, and you may not know or find either of these.

The 5100i for example is rated at 67,800 BTUs maximum. At that rate of output wood is burning at the rate of about 14 lbs per hour at 80% efficiency, assuming you are burning well seasoned wood (about 20% moisture content). Fill the firebox as you desire with your wood mix, remove the wood load and weigh it, and then you can get a good approximation of how long the wood load will burn at maximum output, as well as the total BTUs that will be available during the total burn time.

Of course, the wood load will not burn at the maximum rate for the full burn. So total burn time will be longer, but output BTUs will be falling. The output BTU curve will be something like a bell curve.
