Anyone ever try this? This thermometer only goes to 220 but wondered if this would work with a larger scale...

Why not, it'll give you a relative sense of temp between settings and pellets, as long as you never move it.
 
I used one to get a rough idea of air temp by sticking it in the vent. Not accurate but gives peaks and fluctuations. If I get interested enough I'll get a proper thermometer.
 
I use a battery powered one with a corded probe. I leave the probe in the center exchanger tube and the thermometer on all the time. If I see 300 at idle, I'm happy with the burn. Second year on the dinky AAA battery BTW. I did shut it off in the summer ;)

It has 2 probes and a wireless remote display with programmable temp alarms. It sure saves a ton of running downstairs to check the fire! I have one probe in the supply plenum to monitor the air temp above the firebox and one taped to the stovepipe under a piece of high temp insulation to give me an external flue temp. Batterys last about a heating season worth of 24/7 operation. Love it!
