Hey dare,
Been watching this forum and have a few questions. I will post what most want for a valuable answer.

My house is a 1978 1500sf up stairs and 900sf downstairs. Moderately insulated by our standards. And plan on new windows and siding.

I plan on installing a wood stove in the downstairs area centered. Also plan on installing grates above the stove and in the main hallway upstairs. My thoughts are this worked in the old homes why not here. I would like to use the stove as much as possible to off set our heating cost(electric w/LP off peek).

I guess my two main questions are:
-Is it against code to use grates
-How big of stove would I need

Oh, this is in North Dakota. I was looking at the Lopi Liberty or the Woodstock Ideal/Progress hybrids

If I am missing something let me know

You're on the right track with a 3 cu ft stove. If the stove is centrally located and an open stairway is nearby a grate may not be needed. Check with you local inspector to see if there are any fire code requirements for openings between floors.
