I've ordered 2 of these to hook together so I can gain another inch or 2 from my stove to the corners. How much would say 30° get me?

The DVL 45s give about 4.5 inches each. When I put a pair back to back I got 9 inches. You can aim that 9 inches any direction you want to get the wall clearance you need. I just needed to miss a roof truss so I put mine close to parallel with the back wall.Two of the fixed 45’s would give about 4.5" of offset if I remember correctly. If 45 degrees gives 4.5" and straight gives Zero offset, is it mathematically likely that 22.5 degrees would give in the neighborhood of 2"?
Duravent DVL 45's can be adjusted fully between 45 and 0 degrees. See pic below.

The offset for 2 DVL 45's (positioned at 45 degrees) is 5". The chart does not give offsets for other angles.
Oldman47, I'm not sure where you're measuring 9" of offset. Back in my install days, over a decade ago, I recall the back-to-back offset being approx. 4.5-5".
Anyhow, looks like the OP will be able to obtain any offset desired, up to 5" with the back-to-back set up.

We tried both ways and my wife and I decided we liked it at the stove better. With a straight up 20ft chimney draft has not been an issue.Put them at the top. They are above eye level that way and it looks better.
Personally, I don't think top or bottom will make a bit of difference in draft, especially for the modest angle that you are going to use.
We're not talking about above or below the ceiling support. The OP has established that he's making an offset in the DVL pipe. The question is whether to place the offset near the stove, or near the ceiling.It does make a difference above or below the ceiling adapter. Above you are working with chimney pipe, not DVL. Chimney pipe, at least the brand I used, is only available up to 30º of offset angle.

The 90 would have 3 swivel points instead of just the one. He's right, it's possible you could get the offset out of the one piece. Though I'm not sure it's worth returning your 45’s for.
