I want to reface a brick hearth for my Fisher Mama bear. I need advice on what to use to level the hearth surface prior to refacing it with stone. Also, any advice on what to use to reface it would be great ! Thanks.

Maybe I misunderstand the goal here...you want to level it out, to put stone on it, which is not generally flat or uniform thickness...?

If the brick is solid and well bonded, I'd leave it in place. Clean it well, then use a polymer-modified mortar or a cement-based patching compound to flatten any low spots before installing the new stone.
For the facing, I'd use a quality thin stone veneer rather than full-depth stone. Or even a specialty faux stone designed for fireplaces. It'll keep the weight down and is much easier to work with. Just make sure whatever you install meets the hearth extension requirements for your Fisher stove.
