I am working on repainting and gasketing my door of my Hampton HI300. I would like to remove the latch shown in the pictures during wire wheeling and painting, as that will be a better result than masking it plus i will be able to move the door around easier. Do i just hit the pin with a hammer and a screw driver and push it out? It seems to be in there pretty good. Will it be easy to get it back in?

Looks like a roll pin. GENTLY tap it out. Shouldn't be a problem. Tap back in.
I would use something like a nail punch with a head just big enough to cover the roll pin.
 
You could lubricate it a little when tapping it back in.
