Sure. I've kept a pot of water on my stoves all of my life without any problems. Cheaper than a humidifier!
 
That what post season cleaning and touch-up painting is for. With our lime water, I build up deposits (mainly just white discoloration) from boil overs/splashes/etc during winter, but usually wipe clean. If not, a spritz or two of high-temp black and I'm good to go!
 
what about a coffee can ?.
 
Wouldn't use the coffee can except as a temporary measure (about one year max). It'll soon rust and begin to leak.
