I don't trust the ir. It's a decent guide but intuitively you would think you are getting a reading from where the laser hits and you aren't. It takes a reading from the air temperature between the device and where it hits in the shape of a cone with increasing diameter the more distance you are away.

This is incorrect. An IR thermometer or camera can NOT measure air temperature as air doesnt give off ir radiation. You are correct in that the reading isnt exactly where the laser is though, its a circle and its diameter varies based on distance. It takes the average of the temps in that radius if the "circle", the closer it is the smaller the diameter, farther away the larget. Most ir guns have a sticker on thr side showing this. Most IR guns are accurate to within 2%.
 
I don't fully trust my thermos either. But they give me a guide mark on the heat output I need at a certain outside temp. And if my stack temp is getting high I can shut it down a bit so my draft doesn't get out of control.
 
I don't know because I have tested it and temperatures between the device and where the laser hits change the readings. This leads me to believe the volume of the cone has some effect on the temperature reading despite what the technical specs say about it being a circle around where the laser hits.

I agree. Even if they are off it's consistent and you can learn to use them as a guide to your application.

The first month running this new stove and I was getting frustrated at not ever being able to get my soap over 400. I was using the low therm of the three. Went in the basement to grab the other one off my old stove. I would have these raging fires with great secondaries and the air shut off while the therm read 350-375. Glad I never pumped it up to 600 by thattherm. It would have been way too hot for the stone.
