You're welcome. Seriously, these folks are the ones who finally got me 'fired up' about the importance of getting ahead on the wood supply so that you've got good fuel (even if it's mostly Red Oak like we've got here.) Not to mention that my ID skills are way better, thanks to the years of experience shared here. Funny you say that.. a few nights ago I smoked some armadillo eggs on hickory, apple, and cherry wood. Quite tasty and yes they had a strong chicken taste.
