Two quick questions...

One, Is it bad manners or would it be offensive to buy a stove from one dealer and buy the chimney from another dealer? I like my local guy he is good and knows what he is doing as far as chimneys and installs but he does not carry the stove I realy love. I would have to order the stove from a guy who I'm not completely happy with.

Second, How hot does it get in the ash pan? I don't think I would use the ash pan in a stove for ashes but I was thinking if it got to 225 or 250 degrees that's perfect for slow cooking ribs. well, if you can cook on a wood stove why not cook under it?

I think you're free to do whatever you want. You can spend as much on the chimney as a stove, or more. Don't know for sure, but I think more money is made on the install than the sale. If he doesn't sell the stove you want, he will probably still be happy to install it. If you aren't installing yourself, then you need to go with the guy you really trust.

Ash pans vary a lot in design. What stove are you looking at?

Not sure what temperature it was, but I ran my Jotul Oslo without the heat shield under the ash pan, and the slate tile underneath was pretty hot. As the pan fills with ash it will cool down a lot. The ash will work as an insulator. Youll have to empty the pan to cook those ribs.

+1 on the retailer doing the install. Im sure he wont mind hooking it all up. Im sure many people buy the stove they love at one shop, but down want them to do the install, and vise versa.

There is also the DIY install if youre up for it. Use caution though. Most stove makers will void your warranty if its not installed by a licensed professional.

I beleave it will void my warranty and may not be up to code. Plus my wife says i'm not allowed to play with tools since the bathtub in the kitchen incident of 2003.

Most stove makers will void your warranty if its not installed by a licensed professional

no most stove manufacturers dont care as long as it is to code. Insurance companies are really the only ones who typically care.

Good point. I don't use the ash pan on the 30-NC for ashes but I do use it as a bread warmer. So far I haven't forgotten the rolls were in there.

Using proper cooking techniques this problem issue can be completely avoided. (google Alton Brown - Who loves ya baby back) I was a chef many years before my knees and back told me to find a nice office to work in. I figured, an oven is a metal box that gets hot and a clean ash pan is a metal box that gets hot.....

I spent lots of time with one dealer and found him to be very helpful but in the end he didnt deal with pacific energy stoves. I still wanted to give him my install business and purchase my wood stove from another just to say thanks for your time but they turned me down saying they would only install a stove that they supplied. I ended up buying my PE from a dealer and store that I quite liked and the other guys business is thriving quite well without me!

And I have been burning in wood stoves for 40 years. In the interest of providing advice on this site that is safe, don't do it.
