My new Oslo F500 V3 will have a glowing Cat pretty quick but the Cat thermometer trails behind like crazy taking 15 minutes or more to catch up usually settling in between 800F and 1000F if that Cat is glowing. Is this normal or defective thermometer?

It is normal; 10 minutes is about the time it takes to respond.
