I installed in a corner and purchased and installed heat shields on a englander stove. The manufacturers clearance with heat shields is 8 inches I am at 9.5. when the stove gets real hot the wall becomes hot, you can still put your hand on the wall but it is hot. My question is how hot can the sheet rock actually get?

If you can put your hand on it for a few seconds, it's not too hot. That would be around ~120 °F. The wall is considered safe up to about 185 °F.
