Regular old black iron pipe works well enough for short term experimental purposes, once the final design is settled on 308 SS has held up just fine for me

I have done some with my homemade boiler, I am still experimenting getting the flow right but have been running black iron, all last season and going now to heat DHW. PM if you want more info
