In working on any vintage stove, the only thing I can recommend is be slow and patient.

Be prepared for bolts to break even when you do everything to prevent it. So know how to drill and tap a hole is helpful.

There are exploded diagrams on woodsman for this stove, those are really the best you can get. Take lots of pictures as you take stuff apart.

And be ready to replace some fasteners, because you might as well if you spend the time getting a crappy rusted bolt out.
 
The 3 bolts that hold up the baffle are indeed threaded into the inner top, though there's no reason you can't just drill through and use longer bolts w nuts. Just one less thing to deal with. It's not a terrible job.
