Rinnai ex38/ex22 - setting questions

We've just purchased a home in NH, and it's heating system is 2 Rinnai wall mount LP furnaces, and a propane fireplace. It's a typical 45 year old 24x28 Cape style, finished basement, fairly open main living floor, with a second floor with 2 bedrooms. The basement has the ex22, first floor has the ex38. Previous owners lived there 23 years, full time but while we're looking to stay often, it won't be occupied all the time. Few questions:
-Set back setting - do I shut off the furnace, and set the set back temp to say, 50, to keep the pipes from freezing while we're not there?
-If not the set back setting, should I just leave it on the lowest setting (60) and pay the extra few bucks a month for peace of mind?
-Will these two heaters be enough for the cold NH winters?
Any and all answers and comments will hopefully help my roommate (wife) sleep better - trying to avoid a $16K mini split install!
