Rounds are cracking after 3 days.

Just had a couple of trees chopped (on Wednesday - 3 days ago) and have just noticed that the rounds from one of them has already started to crack / split. Has anyone noticed this so quick before? it is from a Peppermint Gum, which does have a high moisture content for an native Australian tree. But i wouldn't have expected this. The other tree a Blackwood has no signs of splitting / checking.

Yes, it happens. What this shows you is that the ends of the wood have started to dry. Just remember, it is only the ends that are drying. After the wood all dries, those end cracks will tend to close up.
