Can I install a wood stove insert and leave the top uncovered for cooking?

Hi everyone. I have a question about wood stove inserts. Can I install one and leave a space on the top of the stove for cooking? Has anyone here done that?

Lots of people install inserts without the panels - you will get more heat too! You can leave off the side panels also.

The main thing is to seal it all tight at the damper area.....as in:
