You forget (simmer, boil, fry, grill, and) smoke (yourself...).
Well, it is Greece. I'm going to assume it was in an open-air kitchen for most of the year.
 
First restaurant that I ever worked in was owned by Greeks in New Jersey and they always had their feet in with cooking food, They had some fine restaurants on the east coast and food wise the best and I still miss it--something about the taste that cannot be duplicated especially the Italian restaurants and the hoagies and pizza and the deli's wow I miss it..That idea of a cooks stove coming from Greece did not surprise me---they believe in dong more things at once for less...lol lol...That old cook stove is just neat...love it...clancey
