550*-650* seems to be the preferred running temp for these stoves.
 
Those holes are where air comes IN. So if they get blocked, you will have less secondary combustion air, and greater chance that the stove "stalls" when you damper down. When you reload, you should rake the ash away from the back of the firebox, and move coals toward the back.

p.s. Nobody should ever quote a stove temperature in these forums, without specifying exactly what they mean - temps vary wildly depending on how you measure them (external vs probe, stovetop vs. flue, double wall vs. single wall, distance up flue, etc).

550* - 650* stove top (griddle) with cheap external thermometer.
